There was something in the letter (a drug or something like that) that becomes lethal when mixed with something in potato chips. -- nope ~
Did her death involve an overdose of some sort? -- yes. Did the death in question take place in Antarctica, where a single day is actually six months? -- nope. Were the chips potato chips at all? -- yes, they were potato chips.
... Did she accidentally eat some chips that had a deadly virus on them, possibly from the mailbox? -- nope ~
Hm... Perhaps she had taken her pills for some sort of condition, run out, sent a letter for more, ate some chips whose sodium reacted with the pills, and killed her?

like i've already said, you people are too concentrated on a single idea, convinced it's correct. take a step back, think about different possibilities. i purposely added red herrings to this thing after removing details from the original murder mystery; obvious is not always correct. if you still can't get it from this clarification on the earlier hint, i'll critique some more on your guessing technique.
She delivered the letter, and it was to her boyfriend, but he wasn't really her boyfriend. He had told her to deliver a letter to him, he saw the adress, came to her house, and murdered her with something that reacted with the potato chips??
